Ingredients

Kumbaya Campfire Cupcakes

190 grams caster sugar
50 grams Dutch cocoa powder
110 grams plain flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 RSPCA Approved egg
½ cup buttermilk
¼ cup sunflower oil
1 teaspoon sunflower oil
1 teaspoon vanilla extract
½ teaspoon instant coffee
½ cup hot water

Buttercream icing

225 grams unsalted butter, softened
Pinch of salt
125 grams icing sugar
1/3 cup malted milk powder
1 ½ teaspoons vanilla extract
125 grams dark chocolate, melted
¼ cup thickened cream
Toasted marshmallows and biscuit crumbs for decoration

Directions

  1.  Preheat oven to 160°C fan forced. Line cupcake tins with cases.
  2.  Place all the dry ingredients in the bowl of a stand mixer and combine.
  3.  Add buttermilk, sunflower oil, egg and vanilla extract and beat on medium or high with the paddle attachment for two minutes.
  4.  Combine instant coffee and hot water. Turn down the speed of the mixture to slow and gradually add in the coffee mixture until combined.
  5.  Pour batter into the cupcake cases and bake for 18 to 20 minutes.
  6.  Let cupcakes cool before icing.
  7.  In the bowl of a mixer, beat the unsalted butter, salt and icing sugar on low speed for about a minute.
  8. Add in the malted milk powder and vanilla extract and beat on low until combined.
  9. Scrape down the sides of the bowl and add the melted dark chocolate, beating on a medium speed for two minutes. Finally, add the thickened cream and beat for a further minute.
  10. Frost your cupcakes and decorate with the marshmallows and biscuit crumbs.
